- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup cinnamon-sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the flour, sugar, baking powder, and salt in a large bowl until fully combined.
- Whisk together the melted butter, milk, eggs, and vanilla extract in another bowl.
- Combine the wet and dry ingredients gently until just mixed, being careful not to over-mix.
- Beat the cream cheese with the powdered sugar in a separate bowl until smooth.
- Fill each muffin cup halfway with batter, then add a spoonful of the cream cheese mixture and cover with more batter until each cup is about 3/4 full.
- Sprinkle cinnamon-sugar on top of each muffin.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
You can prepare the batter ahead of time and keep it in the fridge for up to 24 hours.
