Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup cinnamon-sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl until fully combined.
  3. Whisk together the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Combine the wet and dry ingredients gently until just mixed, being careful not to over-mix.
  5. Beat the cream cheese with the powdered sugar in a separate bowl until smooth.
  6. Fill each muffin cup halfway with batter, then add a spoonful of the cream cheese mixture and cover with more batter until each cup is about 3/4 full.
  7. Sprinkle cinnamon-sugar on top of each muffin.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

You can prepare the batter ahead of time and keep it in the fridge for up to 24 hours.
