Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces dark chocolate
- 1/4 cup edible gold leaf
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the water and butter in a medium saucepan and bring to a boil over medium heat.
- Add the flour and salt all at once, stirring vigorously until it forms a ball.
- Remove from heat and let the dough cool slightly for about 5 minutes.
- Beat in the eggs, one at a time, until the mixture is smooth and glossy.
- Transfer the dough into a piping bag fitted with a plain round tip and pipe small mounds onto a lined baking sheet.
- Bake for 20-25 minutes until puffed and golden brown.
- Allow to cool completely on a wire rack.
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Cut the tops of the cooled pastry puffs, hollow out if needed, and fill with whipped cream.
- Melt dark chocolate in a heatproof bowl and drizzle over the filled profiteroles.
- Decorate with edible gold leaf.
Notes
Make your profiteroles in advance; store cooled shells in an airtight container for up to two days. Fill just before serving for freshness.
