Instructions

- In another bowl, mix the milk, brewed coffee, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple syrup or whipped cream.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- These pancakes can be made ahead and reheated in the toaster.
- Top with crushed gingerbread cookies for added texture.
