Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup brewed coffee
  • 1 large egg
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
  2. In another bowl, mix the milk, brewed coffee, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup or whipped cream.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • These pancakes can be made ahead and reheated in the toaster.
  • Top with crushed gingerbread cookies for added texture.
