- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 teaspoon red pepper flakes (optional)

Instructions
- Coat the chicken: Start by placing the chicken pieces in a large mixing bowl and adding cornstarch. Thoroughly toss until each piece is well coated. Let it rest for a few minutes.
- Heat the oil: In a non-stick pan or wok, heat the vegetable oil over medium-high heat. Add the chicken in a single layer and cook until golden brown, about 5-7 minutes. Remove and set aside.
- Create the sauce: In the same pan, pour in the soy sauce, sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Stir and bring to a gentle simmer.
- Combine chicken and sauce: Return the crispy chicken to the pan, tossing it in the sauce. Let it simmer for an additional 2-3 minutes to thicken.
- Serve with style: Remove from heat, serve hot over steamed rice, and garnish with green onions.
