- 1 lb Cod fillets, cut into strips
- 1 cup All-purpose flour
- 2 Large eggs, beaten
- 1 cup Breadcrumbs (preferably panko)
- 2 cloves Garlic, minced
- 1 teaspoon Dried thyme
- 1 teaspoon Dried parsley
- Salt and pepper to taste
- Olive oil for frying
- 1 cup Sour cream
- 2 tablespoons Mayonnaise
- 1 tablespoon Lemon juice
- 1 teaspoon Lemon zest
- 1 clove Garlic, minced for the sauce
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Prepare three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mix of panko breadcrumbs and herbs.
- Coat each cod strip first in flour, then in beaten eggs, and finally in the breadcrumb mixture.
- Fry the coated cod strips in batches for about 3-4 minutes on each side or until golden brown.
- Remove cooked strips and let them drain on paper towels.
- In a mixing bowl, whisk together sour cream, mayonnaise, lemon juice, lemon zest, minced garlic, and seasoning for the sauce.
- Serve the crispy cod strips hot with the creamy lemon sauce on the side.
Notes
For a healthier option, bake the cod strips at 425°F for 12-15 minutes. Feel free to customize flavors with different herbs.
