  • 1 cup All-purpose flour
  • 2 Large eggs, beaten
  • 1 cup Breadcrumbs (preferably panko)
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • Salt and pepper to taste
  • Olive oil for frying
  • 1 cup Sour cream
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 clove Garlic, minced for the sauce

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Prepare three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mix of panko breadcrumbs and herbs.
  3. Coat each cod strip first in flour, then in beaten eggs, and finally in the breadcrumb mixture.
  4. Fry the coated cod strips in batches for about 3-4 minutes on each side or until golden brown.
  5. Remove cooked strips and let them drain on paper towels.
  6. In a mixing bowl, whisk together sour cream, mayonnaise, lemon juice, lemon zest, minced garlic, and seasoning for the sauce.
  7. Serve the crispy cod strips hot with the creamy lemon sauce on the side.

Notes

For a healthier option, bake the cod strips at 425°F for 12-15 minutes. Feel free to customize flavors with different herbs.
