Description

A delicious and easy-to-make dish featuring succulent shrimp sautéed in garlic butter, served over creamy lemon parmesan orzo.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
  4. In the same skillet, add the remaining butter and orzo, stirring to coat.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until orzo is tender, about 10-12 minutes.
  6. Stir in the lemon juice, lemon zest, and Parmesan cheese until creamy.
  7. Add the cooked shrimp back to the skillet and mix well.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add red pepper flakes when cooking the shrimp.
  • Make sure not to overcook the shrimp to keep them tender.
  • This dish can be served with a side of steamed vegetables for a complete meal.
