Description

A delicious fusion of crispy fried chicken and street corn, served in soft tortillas with a zesty jalapeño lime ranch dressing.


Ingredients

  • 2 cups fried chicken, shredded
  • 1 cup street corn (canned or grilled)
  • 8 small corn tortillas
  • 1/2 cup jalapeño lime ranch dressing
  • 1/4 cup chopped cilantro
  • 1/2 cup crumbled queso fresco
  • 1 lime, cut into wedges

Instructions

  1. Prepare the fried chicken and shred it into bite-sized pieces.
  2. If using canned street corn, drain it; if using grilled corn, cut the kernels off the cob.
  3. Warm the corn tortillas in a skillet or microwave until pliable.
  4. Assemble the tacos by placing a portion of shredded chicken and street corn on each tortilla.
  5. Drizzle with jalapeño lime ranch dressing.
  6. Top with chopped cilantro and crumbled queso fresco.
  7. Serve with lime wedges on the side.
