Ingredients

- 1 cup dried chickpeas
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking powder
- Salt and pepper to taste
- Oil for frying
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 tbsp lemon juice
- 1 clove garlic, minced (for Tzatziki)
- Pita bread or rice for serving
Instructions
- Soak the chickpeas in water overnight.
- Drain and rinse the chickpeas, then blend them with onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper until a coarse mixture forms.
- Shape the mixture into small balls or patties.
- Heat oil in a frying pan and fry the falafel until golden brown on all sides.
- For the Tzatziki, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and pepper in a bowl.
- Serve the falafel in a bowl with Tzatziki, pita bread or rice, and your choice of toppings.
Notes
- For a healthier option, bake the falafel instead of frying.
