A comforting and flavorful soup featuring tender beef short ribs and caramelized onions, topped with melted Gruyère cheese.

- 2 pounds beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Crusty bread for serving
- Gruyère cheese, shredded
Instructions
- Heat a drizzle of oil in a large pot or Dutch oven over medium-high heat.
- Season the short ribs with salt and pepper, then brown on all sides for about 3-4 minutes and set aside.
- Add sliced onions to the pot, reduce heat to medium, and sauté for 15-20 minutes until caramelized.
- Add minced garlic and sauté for an additional minute.
- Return short ribs to the pot, pour in beef broth, and add thyme, bay leaf, and more salt and pepper. Simmer gently.
- Cover and cook on low heat for 2-3 hours until tender.
- Remove short ribs, shred the meat, and discard bones and excess fat.
- Ladle soup into bowls, place crusty bread on top, sprinkle with Gruyère cheese, and optionally broil until bubbly.
Notes
Make-ahead allows flavors to develop overnight. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
