Easy French Onion Beef Short Rib Soup

Description

A comforting and flavorful soup featuring tender beef short ribs and caramelized onions, topped with melted Gruyère cheese.


Ingredients

  • 2 pounds beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Crusty bread for serving
  • Gruyère cheese, shredded

Instructions

  1. Heat a drizzle of oil in a large pot or Dutch oven over medium-high heat.
  2. Season the short ribs with salt and pepper, then brown on all sides for about 3-4 minutes and set aside.
  3. Add sliced onions to the pot, reduce heat to medium, and sauté for 15-20 minutes until caramelized.
  4. Add minced garlic and sauté for an additional minute.
  5. Return short ribs to the pot, pour in beef broth, and add thyme, bay leaf, and more salt and pepper. Simmer gently.
  6. Cover and cook on low heat for 2-3 hours until tender.
  7. Remove short ribs, shred the meat, and discard bones and excess fat.
  8. Ladle soup into bowls, place crusty bread on top, sprinkle with Gruyère cheese, and optionally broil until bubbly.

Notes

Make-ahead allows flavors to develop overnight. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
