Description

A simple and delicious one-pan meal featuring chicken, rice, and a creamy tzatziki sauce.


Ingredients

Scale
  • 1 lb chicken breast
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the rice and chicken broth.
  3. Place the chicken breasts on top of the rice mixture.
  4. In a bowl, mix Greek yogurt, cucumber, garlic, lemon juice, olive oil, salt, and pepper to create the tzatziki sauce.
  5. Spread the tzatziki sauce over the chicken.
  6. Cover the dish with foil and bake for 30-35 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through.
  8. Garnish with fresh dill before serving.

Notes

  • For a spicier version, add red pepper flakes to the tzatziki sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Feel free to add vegetables like bell peppers or zucchini for extra nutrition.
