- 1 lb chicken breast
- 1 cup rice
- 2 cups chicken broth
- 1 cup Greek yogurt
- 1 cucumber, diced
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, combine the rice and chicken broth.
- Place the chicken breasts on top of the rice mixture.
- In a bowl, mix Greek yogurt, cucumber, garlic, lemon juice, olive oil, salt, and pepper to create the tzatziki sauce.
- Spread the tzatziki sauce over the chicken.
- Cover the dish with foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through.
- Garnish with fresh dill before serving.
Notes
- For a spicier version, add red pepper flakes to the tzatziki sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Feel free to add vegetables like bell peppers or zucchini for extra nutrition.
