- 2 wraps (Flour or Spinach)
- 1 cup Cottage Cheese
- 1 medium Cucumber, sliced or julienned
- ¼ cup Red Bell Pepper, finely chopped (optional)
- ¼ cup Fresh Dill or Parsley, chopped
- Salt and Pepper, to taste
- 1 tablespoon Lemon Juice
- ½ teaspoon Garlic Powder (optional)
Instructions
- In a medium bowl, combine cottage cheese, dill or parsley, lemon juice, salt, and pepper. Mix thoroughly until well blended.
- Lay out the wraps on a clean surface. Spread the cottage cheese mixture evenly across each wrap.
- Arrange cucumber slices along the center of the wraps.
- Tightly roll each wrap from the edge closest to you, folding in the sides as you go.
- Slice each wrap in half diagonally and enjoy immediately or refrigerate for up to 24 hours.
Notes
Make the cottage cheese mixture and veggies a day in advance for meal prep. Avoid soggy wraps by patting cucumbers dry.
