Description

A refreshing and nutritious wrap featuring crunchy cucumbers and creamy cottage cheese, perfect for a light lunch or snack.


Ingredients

  • 2 wraps (Flour or Spinach)
  • 1 cup Cottage Cheese
  • 1 medium Cucumber, sliced or julienned
  • ¼ cup Red Bell Pepper, finely chopped (optional)
  • ¼ cup Fresh Dill or Parsley, chopped
  • Salt and Pepper, to taste
  • 1 tablespoon Lemon Juice
  • ½ teaspoon Garlic Powder (optional)

Instructions

  1. In a medium bowl, combine cottage cheese, dill or parsley, lemon juice, salt, and pepper. Mix thoroughly until well blended.
  2. Lay out the wraps on a clean surface. Spread the cottage cheese mixture evenly across each wrap.
  3. Arrange cucumber slices along the center of the wraps.
  4. Tightly roll each wrap from the edge closest to you, folding in the sides as you go.
  5. Slice each wrap in half diagonally and enjoy immediately or refrigerate for up to 24 hours.

Notes

Make the cottage cheese mixture and veggies a day in advance for meal prep. Avoid soggy wraps by patting cucumbers dry.
