Ingredients

  • 2 large carrots, peeled and grated
  • 2 medium apples (like Granny Smith or Honeycrisp), cored and chopped
  • 1 cup red cabbage, finely shredded
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup walnuts or pecans, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (or to taste)
  • Salt and pepper to taste

Instructions

  1. Begin by peeling the large carrots and grating them into a large mixing bowl.
  2. Core and chop the apples into small, bite-sized pieces.
  3. Finely slice the red cabbage and add it to the bowl along with the chopped nuts and raisins.
  4. In a separate bowl, combine the Greek yogurt, mayonnaise, fresh orange juice, lemon juice, honey, salt and pepper.
  5. Pour the dressing over the salad mixture and gently toss to coat.
  6. Taste and adjust the seasoning if necessary.
  7. Chill in the refrigerator for about 15 minutes if time allows.
  8. Serve chilled or at room temperature, garnished with remaining chopped nuts or parsley.

Notes

The salad gets even better after a few hours, so consider making it ahead of time.
