- 2 large carrots, peeled and grated
- 2 medium apples (like Granny Smith or Honeycrisp), cored and chopped
- 1 cup red cabbage, finely shredded
- 1/2 cup raisins or dried cranberries
- 1/2 cup walnuts or pecans, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon honey (or to taste)
- Salt and pepper to taste
Instructions
- Begin by peeling the large carrots and grating them into a large mixing bowl.
- Core and chop the apples into small, bite-sized pieces.
- Finely slice the red cabbage and add it to the bowl along with the chopped nuts and raisins.
- In a separate bowl, combine the Greek yogurt, mayonnaise, fresh orange juice, lemon juice, honey, salt and pepper.
- Pour the dressing over the salad mixture and gently toss to coat.
- Taste and adjust the seasoning if necessary.
- Chill in the refrigerator for about 15 minutes if time allows.
- Serve chilled or at room temperature, garnished with remaining chopped nuts or parsley.
Notes
The salad gets even better after a few hours, so consider making it ahead of time.
