Instructions
- Prepare the filling: In a bowl, mix the softened cream cheese with the blueberries and your chosen sweetener. Blend until creamy but ensure some blueberry pieces remain.
- Make the dough: In another bowl, blend almond flour, coconut flour, baking powder, egg, and vanilla extract. Mix gently until a soft dough forms.
- Roll out the dough: Lightly dust your work surface with almond flour. Roll the dough into thin sheets, approximately 1/4-inch thick, and cut into rectangles.
- Assemble the roll-ups: Place a spoonful of the blueberry mixture at one end of each rectangle and roll it up, tucking the filling inside.
- Heat the butter in a frying pan over medium heat until melted.
