Ingredients

  • 4 large russet potatoes
  • 1 cup cooked chili
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for about 45 minutes or until tender.
  5. Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
  6. Fill each potato skin with cooked chili and top with shredded cheddar cheese.
  7. Return the filled potato skins to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Remove from the oven and top with sour cream and chopped green onions before serving.
