Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice or pasta for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
  6. Pour in the heavy cream and bring to a simmer.
  7. Stir in the Parmesan cheese until melted and combined.
  8. Slice the cooked chicken and return it to the skillet, coating it in the creamy sauce.
  9. Serve the creamy Tuscan chicken over cooked rice or pasta.
