- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach

- Salt and pepper to taste

Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and combined.
- Slice the cooked chicken and return it to the skillet, coating it in the creamy sauce.
- Serve the creamy Tuscan chicken over cooked rice or pasta.
