- 8 oz pasta (penne or fettuccine)
- 1 lb smoked sausage, sliced
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside.
- Brown the Sausage: In a skillet over medium heat, heat olive oil and add the sliced sausage, cooking until golden brown, about 4-5 minutes.
- Sauté the Vegetables: Add the onion, garlic, and bell pepper to the skillet. Sauté for about 5-7 minutes until softened.
- Create the Sauce: Stir in heavy cream, chicken broth, and Cajun seasoning, allowing to simmer until slightly thickened.
- Combine & Season: Introduce the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt and pepper.
- Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve immediately.
