- 2 salmon fillets
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Cook the orzo pasta according to package instructions; drain and set aside.
- In a large skillet, melt butter over medium heat and add minced garlic, cooking until fragrant.
- Add the corn kernels and cook for about 5 minutes until tender.
- Stir in the heavy cream, salt, and pepper, and bring to a simmer.
- Add the cooked orzo to the skillet and mix well to combine.
- In another skillet, heat olive oil over medium-high heat and cook the salmon fillets for about 4-5 minutes on each side until cooked through.
- Serve the creamed corn orzo topped with the salmon fillets and garnish with fresh parsley.
