Ingredients

  • 1 cup orzo pasta
  • 2 cups fresh corn kernels
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the orzo pasta according to package instructions; drain and set aside.
  2. In a large skillet, melt butter over medium heat and add minced garlic, cooking until fragrant.
  3. Add the corn kernels and cook for about 5 minutes until tender.
  4. Stir in the heavy cream, salt, and pepper, and bring to a simmer.
  5. Add the cooked orzo to the skillet and mix well to combine.
  6. In another skillet, heat olive oil over medium-high heat and cook the salmon fillets for about 4-5 minutes on each side until cooked through.
  7. Serve the creamed corn orzo topped with the salmon fillets and garnish with fresh parsley.
