Ingredients

  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered
  • 1 small head of cabbage, cut into wedges
  • 2 tablespoons mustard
  • 1 tablespoon black peppercorns

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess salt.
  2. Place the brisket in a large pot and add the onion, garlic, beef broth, water, and peppercorns.
  3. Bring to a boil, then reduce heat and simmer for about 2.5 to 3 hours, or until the meat is tender.
  4. Add the carrots and potatoes to the pot and cook for an additional 20 minutes.
  5. Finally, add the cabbage and cook for another 15 minutes until tender.
  6. Remove the brisket from the pot and let it rest for a few minutes before slicing.
  7. Serve with mustard on the side.

Notes

  • For extra flavor, you can add bay leaves and thyme to the cooking liquid.
