Ingredients

- 3–4 lbs corned beef brisket
- 1 onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 4 carrots, cut into chunks
- 4 potatoes, quartered
- 1 small head of cabbage, cut into wedges
- 2 tablespoons mustard
- 1 tablespoon black peppercorns
Instructions
- Rinse the corned beef brisket under cold water to remove excess salt.
- Place the brisket in a large pot and add the onion, garlic, beef broth, water, and peppercorns.
- Bring to a boil, then reduce heat and simmer for about 2.5 to 3 hours, or until the meat is tender.
- Add the carrots and potatoes to the pot and cook for an additional 20 minutes.
- Finally, add the cabbage and cook for another 15 minutes until tender.
- Remove the brisket from the pot and let it rest for a few minutes before slicing.
- Serve with mustard on the side.
Notes
- For extra flavor, you can add bay leaves and thyme to the cooking liquid.
- Leftover corned beef can be used for sandwiches or hash.
- Adjust the cooking time based on the size of the brisket.
