Description

Coconut Shrimp with Lime Chili Dip is a delicious and crispy seafood dish that combines the sweetness of coconut with a zesty lime chili sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon chili sauce
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the flour, salt, pepper, garlic powder, and paprika.
  3. Dip each shrimp in the flour mixture, then in the beaten eggs, and finally coat with a mixture of shredded coconut and panko breadcrumbs.
  4. Place the coated shrimp on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until golden brown and crispy.
  6. In a separate bowl, combine mayonnaise, lime juice, chili sauce, and honey to make the dip.
  7. Serve the coconut shrimp hot with the lime chili dip on the side.

Notes

  • For extra crunch, you can fry the shrimp instead of baking them.
  • Adjust the spiciness of the dip by adding more or less chili sauce.
  • Fresh lime juice enhances the flavor of the dip.
