- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs, beaten

- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 tablespoon chili sauce
- 1 tablespoon honey
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the flour, salt, pepper, garlic powder, and paprika.
- Dip each shrimp in the flour mixture, then in the beaten eggs, and finally coat with a mixture of shredded coconut and panko breadcrumbs.
- Place the coated shrimp on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown and crispy.
- In a separate bowl, combine mayonnaise, lime juice, chili sauce, and honey to make the dip.
- Serve the coconut shrimp hot with the lime chili dip on the side.
Notes
- For extra crunch, you can fry the shrimp instead of baking them.
- Adjust the spiciness of the dip by adding more or less chili sauce.
- Fresh lime juice enhances the flavor of the dip.
