- 3 ripe bananas, mashed
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the mashed bananas, crushed pineapple, and shredded coconut.
- Add the melted butter, sugar, brown sugar, eggs, and vanilla extract to the banana mixture and stir until well combined.
- In a separate bowl, whisk together the baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
