Description

A delightful Coconut Lime Poke Cake that combines the tropical flavors of coconut and lime in a moist, flavorful cake.


Ingredients

Scale
  • 1 box of vanilla cake mix
  • 1 can of coconut milk
  • 1/4 cup of lime juice
  • 1/2 cup of sweetened shredded coconut
  • 1 cup of heavy whipping cream
  • 2 tablespoons of powdered sugar
  • Lime zest for garnish (optional)
  • Toasted coconut for topping

Instructions

  1. Preheat your oven as directed on the vanilla cake mix box.
  2. Prepare the vanilla cake mix according to package instructions and bake in a greased 9×13 inch pan until a toothpick comes out clean.
  3. Remove the cake from the oven and let it cool for about 15 minutes in the pan.
  4. Mix the coconut milk and lime juice in a medium bowl until well combined.
  5. Poke holes all over the top of the cake using a fork.
  6. Pour the coconut-lime mixture over the cake, making sure it seeps into the holes.
  7. Allow the cake to cool completely before refrigerating for at least 2 hours.
  8. Whip the heavy cream with the powdered sugar until soft peaks form.
  9. Spread the whipped cream over the chilled cake.
  10. Top with toasted coconut and garnish with lime zest if desired.
  11. Slice and serve.
