A delightful Coconut Lime Poke Cake that combines the tropical flavors of coconut and lime in a moist, flavorful cake.

- 1 box of vanilla cake mix
- 1 can of coconut milk
- 1/4 cup of lime juice
- 1/2 cup of sweetened shredded coconut
- 1 cup of heavy whipping cream
- 2 tablespoons of powdered sugar
- Lime zest for garnish (optional)
- Toasted coconut for topping
Instructions
- Preheat your oven as directed on the vanilla cake mix box.
- Prepare the vanilla cake mix according to package instructions and bake in a greased 9×13 inch pan until a toothpick comes out clean.
- Remove the cake from the oven and let it cool for about 15 minutes in the pan.
- Mix the coconut milk and lime juice in a medium bowl until well combined.
- Poke holes all over the top of the cake using a fork.
- Pour the coconut-lime mixture over the cake, making sure it seeps into the holes.
- Allow the cake to cool completely before refrigerating for at least 2 hours.
- Whip the heavy cream with the powdered sugar until soft peaks form.
- Spread the whipped cream over the chilled cake.
- Top with toasted coconut and garnish with lime zest if desired.
- Slice and serve.

Make-ahead tip: Prepare the cake a day before and add toppings on the day of serving.
