- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup coconut cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup whipped cream (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, shredded coconut, powdered sugar, and softened butter. Mix until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking dish to form the crust.
- Bake the crust for 15 minutes or until lightly golden.
- In another bowl, whisk together sweetened condensed milk, coconut cream, vanilla extract, and salt until smooth.
- Pour the coconut mixture over the baked crust and spread evenly.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely before topping with whipped cream and serving.
Notes
- For a stronger coconut flavor, use coconut extract in addition to vanilla.
- These bars can be refrigerated for up to a week.
- Garnish with additional shredded coconut or chocolate shavings if desired.
