Description

A delightful coffee cake with a rich cinnamon swirl, perfect for breakfast or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, combine the flour, baking powder, salt, and ground cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. In a small bowl, mix together the brown sugar and chopped nuts (if using).
  8. Pour half of the batter into a greased baking pan, sprinkle with half of the brown sugar mixture, then add the remaining batter and top with the rest of the brown sugar mixture.
  9. Swirl the batter with a knife to create a marbled effect.
  10. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow to cool before serving.

Notes

  • For a richer flavor, use buttermilk instead of regular milk.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This cake can be frozen for up to 2 months.
