- 2 cups warm water (110°F)
- 1 packet (2 ¼ teaspoons) active dry yeast
- 1/4 cup granulated sugar (divided)
- 5 cups all-purpose flour (plus extra for dusting)
- 1 teaspoon salt
- 1/4 cup baking soda
- 1 egg (beaten, for egg wash)
- 1/2 cup unsalted butter (melted)
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon
Instructions
- Combine warm water, yeast, and 1 tablespoon of granulated sugar. Let sit for 5 minutes until foamy.
- Stir in the remaining sugar, flour, and salt until a dough forms. Knead on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and allow to rise for about 60 minutes until doubled in size.
- Preheat your oven to 425°F (220°C).
- Bring 10 cups of water and baking soda to a vigorous boil in a large pot.
- Punch down the dough and divide it into 8 equal pieces. Shape into pretzels.
- Boil each pretzel for about 30 seconds, then place on a greased baking sheet.
- Brush with the beaten egg and sprinkle with cinnamon sugar.
- Bake for 12-15 minutes until golden brown. Brush with melted butter before serving.
Notes
For a healthier version, consider whole-wheat flour and reducing sugars. Serve with various dips like cream cheese frosting or chocolate sauce.
