Juicy roasted chicken thighs glazed with chipotle honey, served alongside creamy smoked gouda mashed potatoes for a comforting meal.


Ingredients

  • 4 Chicken Thighs
  • ½ cup Chipotle Honey Sauce
  • 1 cup Smoked Gouda, shredded
  • 2 lbs Potatoes (russet or Yukon gold)
  • 4 tbsp Butter
  • ½ cup Milk
  • Salt and Pepper to taste

Instructions

  1. Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Arrange the marinated chicken thighs on a baking sheet.
  4. Bake for 25-30 minutes until cooked through and caramelized.
  5. While the chicken bakes, peel and chop the potatoes, then boil in salted water until tender (15-20 minutes).
  6. Drain the potatoes and return them to the pot.
  7. Add butter, milk, and smoked gouda to the potatoes and mash until creamy.
  8. Season mashed potatoes with salt and pepper to taste.
  9. Serve the chicken thighs on top of the mashed potatoes and drizzle with remaining glaze.

Notes

Marinate chicken thighs overnight for deeper flavor. Ensure potatoes are thoroughly drained before mashing to avoid wateriness.
