Ingredients

- 1 lb steak
- 1 cup fresh parsley
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 4 cloves garlic
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- Cooked rice or quinoa for serving
Instructions
- Prepare the chimichurri sauce by blending parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper in a food processor.
- Marinate the steak in half of the chimichurri sauce for at least 30 minutes.
- Grill or pan-sear the steak to your desired doneness, then let it rest before slicing.
- In a small bowl, mix Greek yogurt with lemon juice and a pinch of salt.
- Assemble the bowl by placing cooked rice or quinoa at the bottom, topping it with sliced steak, and drizzling with yogurt sauce and remaining chimichurri.
Notes
- For a spicier kick, add more red pepper flakes to the chimichurri.
- This dish can be served warm or cold.
- Leftover chimichurri can be stored in the refrigerator for up to a week.
