Ingredients

- 1 lb chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and grated ginger, sauté for 1 minute.
- Add mixed vegetables and stir-fry for another 3-5 minutes until tender-crisp.
- Pour in soy sauce and stir to combine, cooking for an additional 2 minutes.
- Season with salt and pepper to taste.
- Serve over cooked rice or noodles.
