- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 6 cups chicken broth
- 2 cups mixed vegetables (e.g., green beans, peas, corn)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat until shimmering.
- Sauté the chopped onion, sliced carrots, and chopped celery for about 5-6 minutes until tender.
- Add the minced garlic and cook for another minute until fragrant.
- Incorporate the diced chicken breast and cook until no longer pink, around 5-7 minutes.
- Pour in the chicken broth and mixed vegetables, and add the dried thyme, salt, and pepper; stir well.
- Bring to a gentle boil, then reduce heat and let simmer for 20-30 minutes.
- Taste and adjust seasoning as necessary before serving; garnish with fresh parsley.
