Ingredients

  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Sauté the chopped onion, sliced carrots, and chopped celery for about 5-6 minutes until tender.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Incorporate the diced chicken breast and cook until no longer pink, around 5-7 minutes.
  5. Pour in the chicken broth and mixed vegetables, and add the dried thyme, salt, and pepper; stir well.
  6. Bring to a gentle boil, then reduce heat and let simmer for 20-30 minutes.
  7. Taste and adjust seasoning as necessary before serving; garnish with fresh parsley.
