Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat until shimmering.
  2. Add the diced chicken, cooking until golden brown, about 5-7 minutes.
  3. Push the chicken to one side of the skillet, then pour in the beaten eggs and scramble.
  4. Add minced garlic and mixed vegetables, stirring for about 3 minutes.
  5. Fold in the cooked rice and soy sauce, mixing well until heated through, about 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.

Notes
