- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables
- 2 cloves garlic, minced
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- Heat sesame oil in a large skillet or wok over medium heat until shimmering.
- Add the diced chicken, cooking until golden brown, about 5-7 minutes.
- Push the chicken to one side of the skillet, then pour in the beaten eggs and scramble.
- Add minced garlic and mixed vegetables, stirring for about 3 minutes.
- Fold in the cooked rice and soy sauce, mixing well until heated through, about 2-3 minutes.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Use day-old rice for best results. Customize with your choice of vegetables or proteins.
