Ingredients

- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1 cup corn
- 1 onion, chopped
- 2 cups chicken broth
- 1 tablespoon olive oil
- 3 cups mashed potatoes
- 1/2 cup milk
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat.
- Add onions, carrots, and other vegetables until softened.
- Mix in the shredded chicken and chicken broth, seasoning generously.
- Simmer for about 5 minutes.
- Pour the chicken and vegetable mixture into a baking dish.
- Spread the mashed potatoes on top of the filling.
- Bake for about 25-30 minutes until golden brown.
- Cool slightly before serving.
Notes
For make-ahead tips, prepare the filling and mashed potatoes one day in advance. This dish can also be made in an air fryer for a quicker option.
