Description

A heartwarming Chicken Shepherd’s Pie with tender chicken, vibrant vegetables, and creamy mashed potatoes.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup corn
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 3 cups mashed potatoes
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onions, carrots, and other vegetables until softened.
  4. Mix in the shredded chicken and chicken broth, seasoning generously.
  5. Simmer for about 5 minutes.
  6. Pour the chicken and vegetable mixture into a baking dish.
  7. Spread the mashed potatoes on top of the filling.
  8. Bake for about 25-30 minutes until golden brown.
  9. Cool slightly before serving.

Notes

For make-ahead tips, prepare the filling and mashed potatoes one day in advance. This dish can also be made in an air fryer for a quicker option.
