- 1 poblano pepper, diced

- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste

Instructions
- In a large pot over medium heat, drizzle olive oil and add chopped onion and minced garlic, sauté until softened (about 5 minutes).
- Add diced poblano pepper and stir well.
- Gently add shredded chicken, black beans, fire-roasted tomatoes, and chicken broth to the pot, then sprinkle in cumin, chili powder, salt, and pepper. Stir thoroughly.
- Bring to a boil, then reduce heat to simmer for 20 minutes.
- Stir in heavy cream or coconut milk; simmer for another 5 minutes.
- Ladle the soup into bowls and garnish with fresh cilantro if desired.
