- 500 grams ground chicken
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup plain yogurt
- 2 tablespoons freshly squeezed lemon juice
- Pinch of salt
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and pepper. Knead until everything melds beautifully.
- With damp hands, take portions of the mixture and form oval-shaped koftas.
- Preheat the grill on medium-high heat. Brush the grates with olive oil.
- Grill the koftas for 10 to 12 minutes, turning occasionally, until charred and cooked through (internal temperature should reach 165°F).
- In a separate bowl, mix the yogurt, lemon juice, and a pinch of salt until smooth and creamy.
- Plate the koftas and serve alongside the garlic yogurt sauce for dipping.
Notes
Kofta mixture can be made a day in advance; refrigerate until ready to grill. Can also bake at 400°F for 20-25 minutes or use an air fryer for a crispy texture.
