- 2 cups okra, sliced
- 2–3 tablespoons Cajun seasoning
- 2 tablespoons vegetable oil

- Green onions for garnish
Instructions
- Sauté the aromatics: In a large stock pot, heat the vegetable oil over medium heat. Add the chopped onions, bell pepper, and celery, sautéing until softened, about 5-7 minutes.
- Add garlic: Stir in the minced garlic and let it cook for another minute.
- Brown the meats: Introduce the diced chicken and sliced Andouille sausage, cooking until browned for approximately 5-7 minutes.
- Combine key ingredients: Stir in the diced tomatoes, chicken broth, sliced okra, and Cajun seasoning. Bring this beautiful mixture to a rolling boil.
- Simmer to perfection: Reduce the heat, cover, and let simmer for 30-40 minutes, stirring occasionally.
- Season to taste: Before serving, season with salt and pepper to taste.
- Serve and garnish: Ladle the gumbo over a generous portion of cooked rice and finish with green onion garnishing.
