Description

Experience the warmth and comfort of Louisiana with this savory Chicken Gumbo, rich in flavor and perfect for gatherings.

Ingredients

Scale
  • 1 lb chicken thighs, diced
  • 1 lb Andouille sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 6 cups chicken broth
  • 2 cups okra, sliced
  • 23 tablespoons Cajun seasoning
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving
  • Green onions for garnish

Instructions

  1. Sauté the aromatics: In a large stock pot, heat the vegetable oil over medium heat. Add the chopped onions, bell pepper, and celery, sautéing until softened, about 5-7 minutes.
  2. Add garlic: Stir in the minced garlic and let it cook for another minute.
  3. Brown the meats: Introduce the diced chicken and sliced Andouille sausage, cooking until browned for approximately 5-7 minutes.
  4. Combine key ingredients: Stir in the diced tomatoes, chicken broth, sliced okra, and Cajun seasoning. Bring this beautiful mixture to a rolling boil.
  5. Simmer to perfection: Reduce the heat, cover, and let simmer for 30-40 minutes, stirring occasionally.
  6. Season to taste: Before serving, season with salt and pepper to taste.
  7. Serve and garnish: Ladle the gumbo over a generous portion of cooked rice and finish with green onion garnishing.

Notes

This gumbo gets better after a day in the fridge. You can also adapt this recipe for a slow cooker.
