  • 12 oz Penne or Fusilli Pasta
  • 2 Medium Boneless, Skinless Chicken Breasts
  • 1 Small Red Onion
  • 2 Cloves Garlic, Minced
  • 1 Red Bell Pepper
  • 3.5 oz Sun-Dried Tomatoes, Oil-Packed
  • 3.5 oz Cherry Tomatoes, Halved
  • 2 oz Pitted Kalamata Olives, Halved
  • 2 Cups Baby Spinach Leaves
  • 4 oz Feta Cheese, Crumbled
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Chili Flakes (Optional)
  • Salt and Freshly Ground Black Pepper
  • 2 tbsp Fresh Parsley, Chopped
  • 1 tbsp Fresh Dill, Chopped (Optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your choice of pasta and cook until al dente, then drain, reserving ½ cup pasta water.
  2. Sauté the Chicken: In a skillet, heat olive oil over medium-high heat. Season chicken and sear for 6-8 minutes until golden. Transfer to a plate.
  3. Cook the Vegetables: In the same skillet, add chopped onion and bell pepper, cooking for 3-4 minutes. Add minced garlic and sauté for another minute.
  4. Add Other Ingredients: Stir in sun-dried tomatoes, cherry tomatoes, and olives, letting them warm for 2 minutes.
  5. Combine It All: Return the chicken to the skillet, add spinach, and stir until wilted.
  6. Mix in the Pasta: Toss the drained pasta with the chicken and vegetable mixture, adding reserved pasta water as needed for creaminess.
  7. Finish with Flavor: Remove from heat and fold in feta, parsley, and dill. Adjust seasoning to taste.
  8. Serve and Enjoy: Serve immediately, garnished with extra parsley if desired.

Notes

Make ahead by prepping chicken and veggies the night before. This dish can also be frozen in portioned airtight containers.
