Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Top with shredded cheese.
