Delightful energy bites bursting with the sweet tartness of cherries and cranberries, blended with nut butter and wholesome oats for a healthy snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup dried cherries, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup nut butter (almond, peanut, or cashew)
  • 1/4 cup honey or maple syrup
  • 1/4 cup chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, combine the rolled oats, chopped dried cherries, chopped dried cranberries, nut butter, honey or maple syrup, chia seeds, vanilla extract, and a pinch of salt.
  2. Mix the ingredients together until well combined. Using your hands can help blend the textures.
  3. Roll the mixture into small balls, about 1 inch in diameter, pressing firmly to hold their shape.
  4. Place the energy bites on a baking sheet lined with parchment paper, leaving space between each bite.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
