  • 1 cup orzo pasta

  • 2 eggs

  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped acorns (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the orzo pasta according to package instructions and set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs and pumpkin puree, mixing until well combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the cooked orzo and chopped acorns, if using.
  8. Pour the batter into a greased cake pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.
