- 1 cup pumpkin puree
- 1 cup orzo pasta
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped acorns (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the orzo pasta according to package instructions and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs and pumpkin puree, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the cooked orzo and chopped acorns, if using.
- Pour the batter into a greased cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
