Instructions

  1. Preheat your oven to 350°F (175°C). Grease the Bundt pan thoroughly.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large mixing bowl.
  3. In another bowl, whisk the eggs and vegetable oil until mixed and frothy.
  4. Gently fold the wet ingredients into the dry mixture.
  5. Fold in the grated carrots evenly throughout the batter.
  6. Pour half of the batter into the prepared Bundt pan.
  7. Mix the cream cheese, powdered sugar, and vanilla in another bowl until smooth.
  8. Spoon the cream cheese mixture over the batter in the pan.
  9. Pour the remaining batter over the cream cheese filling.
