- 1 large head of cauliflower, cut into florets
- 4 slices of bacon, chopped
- 1 large onion, thinly sliced
- 2 cups shredded cheese (cheddar or your choice)
- 1 cup heavy cream
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
- Add the sliced onions to the skillet and cook until caramelized, about 15-20 minutes.
- In a large pot, bring water to a boil and blanch the cauliflower florets for 3-4 minutes. Drain and set aside.
- In a large mixing bowl, combine the heavy cream, garlic powder, salt, and pepper. Stir in the caramelized onions and half of the cheese.
- Add the blanched cauliflower and cooked bacon to the mixture, stirring to combine.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Garnish with fresh parsley if desired and serve hot.
Notes
- For a vegetarian option, omit the bacon.
- Feel free to use different types of cheese for varied flavor.
- This dish can be made ahead of time and reheated before serving.
