Ingredients

  • 1 large head of cauliflower, cut into florets
  • 4 slices of bacon, chopped
  • 1 large onion, thinly sliced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
  3. Add the sliced onions to the skillet and cook until caramelized, about 15-20 minutes.
  4. In a large pot, bring water to a boil and blanch the cauliflower florets for 3-4 minutes. Drain and set aside.
  5. In a large mixing bowl, combine the heavy cream, garlic powder, salt, and pepper. Stir in the caramelized onions and half of the cheese.
  6. Add the blanched cauliflower and cooked bacon to the mixture, stirring to combine.
  7. Transfer the mixture to a baking dish and top with the remaining cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish with fresh parsley if desired and serve hot.

Notes

  • For a vegetarian option, omit the bacon.
  • Feel free to use different types of cheese for varied flavor.
