- 2 large ripe bananas, mashed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup whole milk
- 6 ounces cream cheese, softened
- 1/4 cup granulated sugar (for cream cheese)
- 1 large egg yolk (for cream cheese)
- 1 teaspoon vanilla extract (for cream cheese)
- 1/4 cup thick caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a larger bowl, whisk together melted butter, vegetable oil, and granulated sugar. Add mashed bananas, eggs, vanilla extract, and milk. Mix until smooth.
- Fold the dry ingredients into the wet ingredients using a spatula.
- In a separate bowl, beat cream cheese with sugar, egg yolk, and vanilla extract until smooth. Swirl in thick caramel sauce.
- Spoon muffin batter into each muffin cup. Add a tablespoon of cream cheese mixture, using a toothpick to swirl.
- Bake for 20 to 24 minutes, checking for doneness with a toothpick.
- Let cool for 5 minutes before transferring to a wire rack. Enjoy warm!
