- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup cooked rice
- 1 cup bell peppers, sliced
- 1/2 cup onion, chopped
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, toss the shrimp with Cajun seasoning.
- Heat olive oil in a skillet over medium heat.
- Add the seasoned shrimp and cook until pink, about 3-4 minutes.
- Remove shrimp and set aside. In the same skillet, add bell peppers and onion, sauté until soft.
- Stir in heavy cream and chicken broth, bringing to a simmer.
- Add the shrimp back to the skillet, mixing well to coat.
- Serve over cooked rice and garnish with fresh parsley.
