Ingredients

  • 1 fully cooked bone-in ham (about 810 pounds)
  • 1 cup brown sugar
  • 1/2 cup honey
  • 1/2 cup orange juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Score the surface of the ham with shallow diamond cuts.
  3. Mix the glaze ingredients in a bowl until brown sugar dissolves.
  4. Place the scored ham in a roasting pan and brush generously with glaze, saving some for basting.
  5. Cover loosely with aluminum foil and bake for 1.5 to 2 hours, basting every 20 minutes.
  6. Remove the foil for the last 30 minutes to let the glaze caramelize.
  7. Rest the ham for 15-20 minutes before slicing.

Notes

Make the glaze a day ahead for enhanced flavor. Consider using an air fryer for smaller hams.
