Delicious homemade Brown Sugar Cinnamon Pop Tart Bars that are easy to make and perfect for breakfast or a snack.

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 cup milk
- 1/2 cup brown sugar (for filling)
- 1 tablespoon cinnamon (for filling)
- 1 egg (for egg wash)
- 1 cup powdered sugar (for icing)
- 1–2 tablespoons milk (for icing)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, butter, brown sugar, granulated sugar, salt, and cinnamon until crumbly.
- Add milk and mix until a dough forms.
- Roll out half of the dough and cut into rectangles.
- In another bowl, mix brown sugar and cinnamon for the filling.
- Spread the filling on half of the rectangles.
- Top with the remaining rectangles and seal the edges.
- Brush with egg wash and bake for 20-25 minutes.
- Let cool and prepare icing by mixing powdered sugar and milk.
- Drizzle icing over the cooled bars and serve.
Notes
- Store in an airtight container for up to a week.
- Feel free to add sprinkles on top of the icing for extra fun!
- These bars can be frozen for later enjoyment.
