Instructions
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in chocolate chips if using.
- Preheat a mini muffin pan and lightly grease it.
- Fill each muffin cup about 2/3 full with the batter.
- Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until golden brown.
- Let cool slightly before removing from the pan.
- Serve warm with syrup or your favorite toppings.
