Description

Experience the magic of Braised Chicken Provençal, a tender chicken dish cooked in a rich sauce with cherry tomatoes, olives, and herbs from Provence.


Ingredients

  • 4 chicken thighs or breasts (bone-in)
  • 2 cups cherry tomatoes, halved
  • 1 cup olives (green and black)
  • 2 shallots, sliced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 teaspoons Herbs de Provence

Instructions

  1. Heat the olive oil in a heavy-bottom skillet over medium heat until shimmering.
  2. Season the chicken with salt and black pepper, then place it in the skillet skin-side down. Brown for 5-7 minutes.
  3. Flip the chicken and brown the other side for another 5-7 minutes.
  4. Remove the chicken and sauté shallots and garlic for 2-3 minutes until softened.
  5. Add the cherry tomatoes and olives to the skillet and stir for 1 minute.
  6. Pour in the white wine, scraping the bottom of the pan to deglaze.
  7. Return the chicken to the skillet, cover, reduce heat to low, and braise for 35-40 minutes.
  8. Serve the chicken warm, drizzled with pan sauce and garnished with fresh herbs if desired.

Notes

Allow the dish to sit for a few minutes before serving for better flavor integration.
