- 4 chicken thighs or breasts (bone-in)
- 2 cups cherry tomatoes, halved
- 1 cup olives (green and black)
- 2 shallots, sliced
- 4 cloves garlic, minced
- 1 cup dry white wine
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 2 teaspoons Herbs de Provence
Instructions
- Heat the olive oil in a heavy-bottom skillet over medium heat until shimmering.
- Season the chicken with salt and black pepper, then place it in the skillet skin-side down. Brown for 5-7 minutes.
- Flip the chicken and brown the other side for another 5-7 minutes.
- Remove the chicken and sauté shallots and garlic for 2-3 minutes until softened.
- Add the cherry tomatoes and olives to the skillet and stir for 1 minute.
- Pour in the white wine, scraping the bottom of the pan to deglaze.
- Return the chicken to the skillet, cover, reduce heat to low, and braise for 35-40 minutes.
- Serve the chicken warm, drizzled with pan sauce and garnished with fresh herbs if desired.
Notes
Allow the dish to sit for a few minutes before serving for better flavor integration.
