- 2 tablespoons Butter (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken with salt, pepper, minced garlic, and rosemary.
- Sear the chicken thighs in a cast iron skillet for 10 minutes until golden brown on both sides.
- Bake the skillet in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Prepare the potatoes by peeling and chopping them, then toss with olive oil and season to taste.
- Make the gravy by deglazing the skillet with chicken broth.
- Serve the chicken thighs with potatoes and drizzle with gravy.
