Ingredients

  • 4 Bone-in Chicken Thighs
  • Salt & Pepper
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 1 tablespoon Fresh Rosemary (chopped)
  • 4 Potatoes (Yukon gold or red)
  • 1 cup Chicken Broth
  • 2 tablespoons Butter (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken with salt, pepper, minced garlic, and rosemary.
  3. Sear the chicken thighs in a cast iron skillet for 10 minutes until golden brown on both sides.
  4. Bake the skillet in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  5. Prepare the potatoes by peeling and chopping them, then toss with olive oil and season to taste.
  6. Make the gravy by deglazing the skillet with chicken broth.
  7. Serve the chicken thighs with potatoes and drizzle with gravy.
