Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup finely chopped almonds
- 1/2 teaspoon salt
- 1/2 cup blueberry preserves
- Powdered sugar for dusting
Instructions
- Preheat your oven: Set your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Cream butter and sugar: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 3-5 minutes.
- Add extracts: Blend in the vanilla and almond extracts.
- Incorporate dry ingredients: Gradually mix in the flour, chopped almonds, and salt until just combined.
- Prepare the cookie dough: Take about a tablespoon of dough, flatten it, and place a small spoonful of blueberry preserves in the center. Fold the dough around the filling to form a ball.
- Arrange on the baking sheet: Place the cookie balls on the lined baking sheet, leaving space between each.
- Bake: Bake for 12-15 minutes or until edges are lightly golden while centers remain soft.
- Cool and dust: Let cookies cool for 5 minutes, then roll in powdered sugar before transferring to a wire rack to cool completely.
Notes
Make-ahead tips: Chill the dough overnight for easier handling. You can also experiment with different fruit preserves.
