- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons ice water
- 2 cups milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2–3 blood oranges, thinly sliced
Instructions
- Preheat your oven to 350°F (175°C).
- Combine flour, powdered sugar, and salt in a bowl.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in egg yolk and ice water gradually until a dough forms.
- Roll out the dough until 1/4 inch thick, fit into tart pans, and chill for 30 minutes.
- Bake for 15-20 minutes until golden, then cool.
- Heat milk in a saucepan until simmering.
- Whisk together sugar, egg yolks, cornstarch, and vanilla in a bowl.
- Slowly pour hot milk into the egg mixture while whisking.
- Return to saucepan and cook until thickened, stirring constantly.
- Pour custard into cooled tart shells and refrigerate until set, about 2 hours.
- Garnish with sliced blood oranges before serving.
Notes
For a gluten-free option, use almond flour or a pre-made gluten-free pie crust. The custard can be made a day ahead for convenience.
