- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 2 (15-ounce) cans black beans, drained and rinsed
- 1 (14-ounce) can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper, optional
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery, sauté for about 5 minutes until softened.
- Add minced garlic and cook for 1 minute.
- Stir in cumin, smoked paprika, chili powder, oregano, coriander, salt, black pepper, and cayenne pepper.
- Add black beans, diced tomatoes, and vegetable broth, stirring well.
- Bring to a boil, then reduce heat and simmer uncovered for about 25 minutes, stirring occasionally.
- Blend the soup with an immersion blender until creamy, leaving some texture.
- Taste and adjust seasonings as necessary.
- Serve warm, garnished with cilantro, sour cream, avocado, lime wedges, or diced red onion.
