A delicious and hearty beef enchilada bake that combines layers of seasoned beef, tortillas, and cheese for a comforting meal.

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the enchilada sauce, cumin, chili powder, salt, and pepper to the beef. Stir to combine and heat through.
- In a baking dish, layer 4 corn tortillas on the bottom.
- Spread half of the beef mixture over the tortillas.
- Add half of the black beans and corn, followed by a layer of cheese.
- Repeat the layers with the remaining tortillas, beef mixture, beans, corn, and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
Notes
- For a spicier version, add diced jalapeños to the beef mixture.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Feel free to substitute ground turkey or chicken for a lighter option.
