Description

A delicious and hearty beef enchilada bake that combines layers of seasoned beef, tortillas, and cheese for a comforting meal.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the enchilada sauce, cumin, chili powder, salt, and pepper to the beef. Stir to combine and heat through.
  4. In a baking dish, layer 4 corn tortillas on the bottom.
  5. Spread half of the beef mixture over the tortillas.
  6. Add half of the black beans and corn, followed by a layer of cheese.
  7. Repeat the layers with the remaining tortillas, beef mixture, beans, corn, and cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.

Notes

  • For a spicier version, add diced jalapeños to the beef mixture.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to substitute ground turkey or chicken for a lighter option.
